In various cuisines around the world you can find truffles with coconut and condensed milk.
In Brazil, they have coconut kisses (beijinhos de coco, the coconut version of brigadeiros), in Morocco they have coconut truffles with white chocolate, in India they have ladoo / laddu (fried in ghee), and in Italy they make coconut bonbons (Raffaellos).
We make our own version: rainbow truffles with coconut! You can use plain condensed milk, or condensed coconut milk if you are vegan.
Coconut Truffles Recipe
The basic recipe for coconut truffles actually consists of only two ingredients: desiccated coconut and condensed milk. We add (gel) food coloring to make the rainbow colors.
Do you eat vegan? Then buy vegan food coloring. You can use natural food coloring, but in this recipe we recommend not to use liquid dyes. Or opt to make healthy coconut truffles with fruit!
You can use natural color powders (beet powder, carrot powder, turmeric, matcha powder, blue spirulina and açai powder). Note that these also add flavor.
This coconut ball recipe can be completely adapted to your own taste. For example, you can put a nut in the middle, like Raffaellos.

You can also dip these coconut balls in melted chocolate, you get bounty balls!

Without food coloring, these coconut balls are a perfect Christmas snack, because they are like snowballs! You can also dip them in melted white chocolate.
How To Make Coconut Truffles?
It is really very easy, but a bit sticky! You mix 200 grams (2 cups) of (unsweetened) desiccated coconut with half a can of condensed (coconut) milk.
This will be a very sticky mixture. Leave it for a while, so that the desiccated coconut absorbs a part of the milk.
To make rainbow balls, divide this mixture between 6 bowls and add a color to each bowl.
We use red, orange, yellow, green, blue and purple for the rainbow colors. Color gels work better than liquid (because it is already so sticky).
You can make four balls from each bowl, or 3 if you want bigger coconut balls.
If you grease your hands with (coconut) oil beforehand, the mixture will stick much less! You then roll the balls through the rest of the coconut grater.
When you have rolled all 24 coconut balls (or 18 larger balls), put them in the fridge for at least 30 minutes, so that they stiffen.

Rainbow Truffles with Coconut
These coconut truffles are made with condensed milk, desiccated coconut and coloring (natural options included).
Ingredients
- 2 ½ cups desiccated coconut (240 gram)
- ½ can condensed (coconut)milk
- food coloring or super food powders
- coconut oil (optional)
Instructions
- Mix 2 ¼ cups (200 grams) of desiccated coconut with the condensed (coconut) milk.
- Divide the mixture between 6 bowls and add a color to each cup. We use gel food coloring for vibrant colors, but you can use natural food coloring (like super food powders) too.
- Roll 4 balls per color and roll the balls through the remaining coconut grater. Tip! Grease your hands with (coconut) oil before you roll the balls, so it is less sticky.
- Leave to set in the refrigerator for at least 30 minutes.
Notes
Make them Raffaello balls by putting a hazelnut or almond in the center of each ball!
